Taiwanese Beef Noodles

This was all the way back before MRT (underground system in Taiwan) was built in Taipei City, there used to be a street named Ta-chun street (塔成街) stands out at least ten different stores selling one same name, it is Taiwanese Beef Noodles.

Ingredients / Preparation:
1. 1000g gravy beef / cut into 7*6*3cm cubes
2. 3 green onions / cut into 10cm lengths
3. 3 sliced ginger / 3mm thick
4. 3 garlic cloves / crushed off skin
5. 1 chilli / thickly sliced
6. 1 onion / cut into half
7. 2 tomatoes / cut into a quarter
8. 1 carrot / cut into cubes
9. 1 spice bag
10. 1600ml beef stock
11. 2 tablespoon sugar
12. salt / to taste
----- sauces -----
13. 1 teaspoon broad bean paste
14. 1 teaspoon chilli sauce
15. 1/2 cup soy sauce
16. 3 tablespoon rice wine


Method:
1. Boil one pot of water, blanch the beef for a few minutes. Remove beef from the pot, rinse with cold water and drain them.

2. Meanwhile, heat 1 tablespoon of cooking oil in a wok over medium high heat. Add ingredients 2 to 5 and broad bean paste, stir-fry for 2 to 3 minutes. Add beef and rice wine, stir-fry for 1 minute. Add tomatoes, carrots, sugar, chilli sauce and soy sauce. Increase the heat to high heat, add 750ml beef stock and spice bag, quickly stir all the mixed, add salt to taste.

3. Wait till the mixed is boiled, reduce the heat to low heat, let it simmer with a lid on for 1 hour.

4. Bring the remaining stock to boil, divide between bowls with the beef mixed soup and serve with noodles.



Nagging PDD:
*Some stocks may have heavier taste than the others, in the main beef mixed soup has already contained a strong flavour, try to lighten the stock if using packaged stock. And of course natural stock would be a better option, I normally do pork and chicken mixing for this soup, because they are the easiest to get from markets.

*Non-chilli taker can avoid chilli, broad bean paste and chilli sauce.
